Humans of the Catskills: Rudd Hubbell

Rudd Hubbell

Journey to the Catskills:

I was born here in the Catskills along the upper East Branch of the Delaware River. My whole world view began and ended in the hills and hollows during my growing years. Trips to either Oneonta or Kingston, NY were trips to the City. I was fortunate to be raised by a whole community of farmers, loggers and local merchants and clergymen. I was at home wherever I wandered along the valleys, and I climbed to the top of the hills to see a world beyond the one I knew.

Vocation:

I’m a business owner.

Avocation*:

My avocation is that of being a wandering woodsman, an obscure ranger.

Happiness Is:

Happiness is found in rambling aimlessly without a care for time and space.

Favorite Dish:

I love to cook and try new foods and dishes. I find the greatest pleasure in making a meal of those things that were grown, raised, foraged, or hunted locally. There is no greater gift than to find nourishment in what is provided naturally. A sip from a hillside spring with cheese and nuts is as enjoyable as a lavish five course meal created over the course of a day with friends and family. To collect ingredients and create a meal nourishes both the body and mind, creating sustained comfort. I love the creation in cooking.

*Hubbell takes the most spectacular nature photographs and captures instances none of us would.
